Kale Salad with Strawberry Champagne Vinaigrette

It’s heaven when @mattc_27 is taking a plant-based sport nutrition course via@matthewkenneycuisine and I’m the taste tester…… On deck earlier this week was an amazing kale salad with strawberry champagne vinaigrette over pistachio purée.. Coupled with a TJ’s veg burger garnished with beet hummus, avocado and sweet potato tots!
