Beyond Meat Pasta

#BeyondMeat pasta night with sweet potatoes, kale, olives, peppers, portabello mushrooms, and red pepper/eggplant/garlic sauce… On the side: sprouted/gluten free bagel with artichoke spread and avacado! Great source of nutrients, protein, healthy fats, and loads of energy sources…. All after a delicious week of almost three workouts a day (including daily yoga) – pure bliss coupled with excitement and nervousness for #imaz#ironmanarizona – almost single digit weeks away….#yowzer
No worries that it’s all in the midst if starting a new position and moving to Denver –#LetsDoThis
