Cinco de Mayo Dinner

Matt’s Cinco de Mayo dinner creation – pure deliciousness!!! Spinach, quinoa/rice, marinated portabella mushrooms (marinated overnight in tamari, organic teriyaki, garlic, and onion), peppers, tomats, and avocado! We rely on avocados regularly for good fat/energy during triathlon training.

Nicely done @mattc_27 πŸ™‚
