Black Bean Soup

Dinner (kale salad and famous black bean soup) in honor and memory of Julia’s mum Nancy who remains fondly in all our hearts..especially her raw cooking talent and my initial inspiration during college to go veg….

Black bean soup recipe (still on your mums paper in my cookbook):
1/4 cup EVOO
4 onions
3 stalks of celery
1 lb (16 oz) black beans
1/4 tsp cayenne pepper
2 tsp cumin 
6 cubes veg stock
6 cups h2o
1/4 cup balsamic vinegar
1/2 cup sherry
Directions: soak beans overnight; heap oil, add onions, garlic, and celery – cook until light brown; combine with beans, pepper, cumin, broth and water in a large pot; bring to a boil, reduce heat, cover, simmer until tender (approx 1 1/2 hr); blend ingredients in pot with hand blender, before serving add vineager and sherry… Voila – enjoy! She use to serve with yum bread and dipping sauce of EVOO and balsamic…
